Often times when I share my vegan meals for beginners cooked up on Facebook I get asked a lot about the recipes etc. It’s just way too much to type up and send or post on Facebook then entire recipe, and since this is my hobby space (where I love to share what I sew and my crafting projects) shoot… why not just post the recipes here too, right?!

So.. ok.. making this meal was super quick, easy, fun, and of course yummy!!

Simple Vegan Meals for Beginners Recipe

I started my plant based journey in 2012 because I went to my family house here in Duluth Georgia and they were sharing with me why they went vegan and it truly inspired me. So that very same day I stopped eating meat (after hearing their stories etc) and have never looked back. Stopped dead in my traps… cold turkey… I was in my early 30s around this time.

Although I’ve been eating this way since 2012 and yea, from time-to-time I’ll post what I made, but I still do research myself. I’m always googling “easy vegan meals for beginners‘ or something like along the lines. I encourage you to do the same if you’re vegan inspired and want to ease back on the meat. Google! Also, YouTube can be a great source for you too. TONS of YouTube videos where people will visually walk you step-by-step through this process. Just make YouTube your best friend.

How I Made My Creamy Garlic Pasta Vegan Style

…again GOOGLE!

I had a brain fart on what to cook for dinner. So I hopped on Google and found this recipe posted by Yup It’s Vegan sharing their version of it’s One Pot Creamy Garlic Pasta recipe and ingredients. I followed their basic blueprint and of course I put my own spin-off on it. Good thing about going vegan is that you can literally add anything you like to the mix. There is no rules for the perfect meal on how you can things to taste and look.

So here we go…

I started off by chopping up / dice veggies. Onion, green bell peppers, tomato, and garlic. I used 1/2 tbsp of Olive Oil and saute’ the onions and bell pepper first. Not to get brown, just enough for it to get soft.

Then once that’s soft, I add the tomato and chopped / dice fresh garlic.

Here I let everything cook for 2 – 3 minutes tops. Get soft. Not ‘brown’.

Then I added 2 cups Organic (Vegan) Vegetable Stock and once it reached a boil I added 1/2 cup of non-dairy milk.

I let it all boil together for 3 minutes and I mixed thoroughly. Then I put in dry vegan fettuccine noodles. I used just one box/pack.

After adding the vegan fettuccine noodles I let this boil together for 20 minutes.

Now at this point here is where I stopped following the vegan recipe I found on Google and started to add the rest of ingredients to the mix. I put in fresh broccoli and fresh cauliflower (no frozen veggies. All fresh from the Farmers Market here in Decatur, GA).

…again I let this combo all cook / boil for 20 minutes.

I then some seasonings and spice. I added;

  • Nutritional Yeast – to get really thick and creamy. This will make it ‘cheesy’
  • Salt- to taste
  • Black pepper
  • Red pepper flakes – (just 2 pinches)
  • Spinach – 3 handfull
  • Thyme – 4 stems.

And that’s it! Our Vegan dinner is done! Good, clean, taste so fresh, and digest so smoothly. Just 30 minutes is exactly what it took me to whip up for a household of 4. I made enough that will last us for 3 days.

Like I mention before, the good thing about being vegan and making your own dish is that you can add or take away anything you like. There are no rules to this. You can add mushrooms too. I HATE mushrooms but most folks love it.

When I used to eat chicken and beef I made this too. But back then (prior to 2012) I always added chopped up white chicken breast. I know a ton of people who stopped eating meat but still eat seafoods. So you can also add shrimp as well for the seafood lover in you.

    1. lol.. yess Lia. Very simple, easy, and quick. Going vegan is definitely a lifestyle change so for beginners I would always encourage them to take it slow and just transition into it that way.
