VEGAN SUNDAY DINNER: Curried Cauliflower, Potatoes, Chick Peas, & Spinach

Waah Gwaan?! Mama’bear is back with another Vegan Sunday Dinner.

OK, so sorry I don’t have enough pics to share here but I whipped up this Sunday dinner quickly and my iPhone was charging at the same time we all was eating. Of course we was sooo hungry and by the time we done eat phone done charge up! haha.

But anyway this vegan dinner is all done. Quick. and Simple. Taste soooo clean!! I stopped eating meat in 2012. No poultry and no dairy neither🤢🤮. I’m 100% plant based.

I started my plant based journey in 2012 because I went to my family house here in Duluth Georgia and they were sharing with me why they went vegan and it truly inspired me. So that very same day I stopped eating meat (after hearing their stories etc) and have never looked back. Stopped dead in my traps… cold turkey… I was in my early 30s around this time and right now typing this up and seeing you here reading this I’m 40.

Since I don’t have some fancy and pretty pics to share with you at this time of my finished product, I went ahead and captured some other images for use so you can have a visual of what it looks like. Look, Mama’bear got issh to do! DO NOT JUDGET ME! *smile*…. but hey, also, you can Google this and do your own research. I recommend you use YouTube to visually walk you through this as well.

So here I can share the recipe and ingredients with you and I’ll also share with you what I did and how I cooked it.

Curry Cauliflower Ingredients Needed:

For starters I purchase all of my ingredients and food supplies from my local Farmers Market located in Decatur, GA. Fresh and organic stuff. It’s just far more cheaper buying in bulk this way rather than going to the local grocery stores that charge us an arm-and-a-leg for the same simple ingredients. Folks are always thinking it’s “expensive” to go vegan.. Ha! Yea right…I beg to differ.

I don’t buy anything processed and or preserved. The only thing I honestly bought in the can was the coconut milk (and for this it was organic too which means I have to use it quick, within a matter of days from buying it, or the can of coconut milk will go bad and end up dumped down the drain).

Now here are my list of items purchased…

  • Cauliflower – 1 head (wash and boil for 10 minutes ahead of time)
  • Chickpeas (also known as Garbanzos)- 1 bag (wash first and then soak your peas overnight so it will get soft. Then the next day boil to soften)
  • Irish potato – just 1 (wash, skin, and boil for 10 minutes ahead of time)
  • Spinach – 1 bag
  • Garam Masala – 1 tsp
  • Coconut Milk – 1 can
  • Curry Powder – 2 tsp
  • Veggies: Tomato-2 chopped, Onion-1 chopped, Garlic-3 cloves, Bell pepper-1 chopped, and Scallion-3 chopped
  • Thyme-4 stems, Salt-to taste, Ginger-1 thumb size, and black pepper-to taste

Now going vegan is definitely a life style change. I would encourage those that are seeking to go vegan is slowly transition in to this. Studies shows going back to the Earth by having a plant based diet improves our health and reverse diseases (like diabetes symptoms and so forth). But hey… I’m not any expert at this. So don’t quote me. Best to do your own research.

Time to Put Together and Begin to Cook

  1. Add some oil to a pan. Put the onion, garlic, and ginger in, and saute it over medium high heat for a couple of minutes or until it is fragrant.
  2. Put the curry, garam marsala, salt, and pepper in. Cook for a minute or two until the spices activate.
  3. Place the tomatoes in and cook them for a minute or two.
  4. Pour in the coconut milk and bring it to a boil.
  5. Put in chickpeas and mix with sauted seasoning and spices.
  6. Then add soften potatoes and cauliflower and mix thoroughly.
  7. Add baby spinach approx 3 hand-fulls. You’re adding this last.
  8. Reduce the heat to medium, add in the chickpeas, and simmer for 7 to 10 minutes.
  9. Goes extremely well with hot rice, such as Jasmine rice or Basmati rice.
  10. Enjoy your coconut curry cauliflower, chickpeas, potato, and spinach.
